Arctic Foxes: The Unintentional Gardeners — In Defense of Plants:

Here is an arctic fox I saw at the Point Defiance Zoo this last summer
Here is an article I liked about arctic foxes as Intentional Gardeners.

'via Blog this'

I can't say I have ever been to the arctic (though I have been to the Inside Passage portion of Alaska via cruise ship twice) nor have I seen arctic foxes in the wild personally.  However, I have seen them at the Point Defiance Zoo in Tacoma.  I never really knew that they could be unintentional gardeners, but they do seem to be scavengers and clean up the waste other animals leave behind (like polar bear kills).  Here in Washington, we don't get arctic foxes in the wild, but we do get coyotes and red foxes in various places.  BTW, I have heard that arctic foxes are being threatened by global warming and the growing presence of red foxes in the arctic, so I am sure their role in the ecosystem will change as a result.
